Bang Bang Chicken Pasta

Ingredients

12 oz package of Garlic Scapes Linguine
1 lb chicken breast, cubed
2 cloves of garlic, minced
2 tbsp extra virgin olive oil
1 small zucchini, minced
1 bell pepper, minced
1/2 c light mayo
1/4 c Thai sweet chilli sauce (Jammed With Love makes a great one)
2-4 tsp of your favorite hot sauce (sriracha would work great, but we used Sa’s Homestyle)
2 tbsp honey
1-2 tsp lime juice

Garnishes: thinly sliced mango, wedge of lime

Method

Begin by starting a large pot of water on high for the pasta, and by heating olive oil in a sauté pan over medium heat. Add garlic and cook until aromatic, then add chicken. Cook until the juices run clear and the meat is just cooked through, then add bell pepper and zucchini, bring down to low, and cover the pan.

Meanwhile, whisk together mayo, sweet chili sauce, sriracha, honey, and lime juice. (Note: add in sriracha bit by bit, tasting in between for desired heat). Add the sauce and incorporated in well with the chicken and vegetables.

Cook pasta as the package instructs, then strain, and add into the sauté pan to gently toss in the sauce with the chicken. Garnish as desired and serve.

Serves 3.

Feel free to substitute vegetables and ingredients however you need to to make a sweet and spicy sauce to your desired taste.
