Artichoke & Boursin

#1 Lemon Butter
Simmer lemon juice and white wine with minced shallot and garlic; reduce by 3/4, then remove from heat and whisk in butter.

#3 Brown Butter
Slowly melt butter over low heat until light brown, add chopped sage or any other herb or aromatic of your choosing. Remove from heat, finish with walnuts and parmigiano.

#4 Red Wine Reduction
Simmer red wine and a splash of balsamic vinegar with minced shallots, reduce by 3/4, remove from heat and whisk in a pat of butter.

#5 Spinach with Crispy Bacon, Onion, & Garlic
A simple sauté, which can then be topped with toasted pecans and shaved parmigiano.

#6 Sautéed Mushrooms & Asian Greens
Then add to chicken or miso broth with ginger, scallions, cilantro, and soy.

#7 Garlic, White Wine, & Olive Oil
Reduce by 3/4, then finish with parmigiano, flat leaf parsley, green onion, and crushed red pepper.

#8 Butter Braised Leeks
Sauté over low heat until completely tender, and add water as necessary to prevent burning. Season with salt and white pepper.
