Tomato-White Wine Sauce with Calamari



12 oz Valicenti Squid Ink Spaghettini
2-3 diced Roma tomatoes
1/4 c white wine
2 cloves garlic, minced
2 tbsp olive oil
1 tbsp finely chopped fresh oregano (plus a pinch for garnish)
1 pinch red pepper flakes
1-1 1/2 lbs fresh calamari
Salt and pepper to taste
Lemon slice & grated Parmesan for garnish


Place garlic and olive oil over medium heat until aromatic.

Then, add tomatoes, oregano, salt, and pepper, and heat all together.

Next, add in calamari and cook until opaque (about 2-3 minutes, though be careful not to over-cook).

Boil pasta as instructed, then strain and serve with sauce on top, garnish.

Serves three.
