Balsamic Strawberry Pasta Salad



12 oz package of one of our short, blonde pastas (we used Garganelli)
1/2 c balsamic vinegar
1 tbsp sugar
1 pt fresh strawberries, hulled & quartered
8 oz ball of mozzarella, diced
3/4 c fresh basil, chopped


Start by reducing balsamic vinegar over medium-high heat with sugar added in. Reduce until 1/2-1/3 of the original volume. Add additional sugar to taste. Let the reduction chill before moving on to the next steps.

Boil pasta as the package suggests, then rinse under cold water immediately once strained until all of it is cool to the touch. This will prevent the pasta from cooking further.

Toss pasta in a bowl along with mozzarella, strawberries, and basil until well-combined. Drizzle balsamic reduction over salad, and serve.
