Sausage, Bell Pepper, & Mushroom Sauté

Ingredients

12 oz package of Valicenti Garlic Scapes Linguine
1 red bell pepper, chopped
6-8 oz of Italian-style sausage, sliced
1 pt oyster mushrooms
1 medium onion, chopped
1-2 cloves of garlic, minced
1 tbsp olive oil, more as needed

Method

In a sauté pan, heat olive oil and garlic over medium-low until aromatic. Then, add sausage and cook until browned, then add in bell pepper, onion, and mushrooms, turning heat up to medium.

Cook pasta as package instructs, then strain and add into the sauté pan and toss with rest of ingredients.

​

Serve with basil as an optional garnish.

​

Serves 3.
