Grilled Corn, Tomato, & Shaved Fennel Salad



12 oz Valicenti Spicy Tomato Pasta
Roasted garlic, minced to taste
4 ears of corn
2 finely diced tomatoes
2 c shaved fennel
1 shaved red onion
Fresh chopped basil to taste
2 tbsp olive oil
Splash of balsamic vinegar
2 avocado, sliced thinly for garnish


Grill some corn on low heat with salt, peppercorns and olive oil. Once blackened slightly, remove from heat and let cool before slicing kernels from the ear.

Start water to boil for pasta, then combine corn with fennel, onion, tomatoes, basil, along with garlic in a bowl and toss with olive oil and splash of balsamic vinegar.

Fan avocado slices on plate, and cook pasta as the package directs. Plate pasta at base of fanned avocado and top with grilled corn salad. Garnish with grated cheese of your choosing.

Serves 3-4
