Deep, smokey and complex, this ravioli takes a week to make! Leg of lamb deboned and marinated for 5 days in extra virgin olive oil, balsamic and dijon with tons of aromatics, herbs, spices and a touch of lemon then trussed and slow barbecued atop a bed of rosemary for an entire day. It's then combined with roasted sweet potatoes and rosemary-caramelized onions for a complex but perfectly balanced tase of summer! Wrapped in a blonde dough. (Dairy Free)

Strawberry & Chèvre w/ Cracked Black Pepper, Lemon & Thyme

It's back! A fan favorite, this flavor has been gathering steam for several seasons and is now one of our most requested flavors! Beautiful Hollis strawberries gently roasted and combined with creamy Vermont chèvre then finished with fresh thyme and a hint of cracked black pepper and lemon zest. Wrapped in a lemon, thyme and black pepper flecked dough, this flavor is actually more savory than sweet.

It's perfect served with a simple summer salad of baby arugula, fresh strawberries, crumbled chèvre and toasted walnuts in a lemon-balsamic vinaigrette for a light summer lunch or appetizer!
