Grilled peaches with Basil

Our most requested flavor, this ultimate fan-favorite is only available for a few short weeks in summer! Despite being made with sweet, juicy native peaches at peak ripeness, this flavor, like our other fruit-based ravioli, is designed with a savory application in mind. It's made by char-grilling then oven-drying the peaches then combining them with fresh basil, cream cheese, nutty Grana Padano cheese and buttery croissant for thickening and adding incredible body and richness.

Served along with a skewer of pesto-grilled shrimp or chicken and a simple summer salad of your favorite baby greens, local heirloom cherry tomatoes, shaved red onion then drizzled with a basil vinaigrette and topped with pistachios and shaved Parmigiano. It makes for a perfect lunch al fresco or first course for your next dinner party!

Grilled Corn & Fennel with Vella Dry Jack Cheese

Corn season is here! A unique savory flavor nicely representing our harvest season, this ravioli combines chargrilled native corn and our sweet fresh fennel with our roasted sweet peppers and the truly original, nutty, deep flavor of Vella Dry Jack cheese. Excellent paired with our Red Gravy or tossed with a summer succotash of garlicky sautéed corn, sweet peppers, zucchini and shell beans then topped with some shaved Vella Dry Jack cheese!

You can also pair it with this spin on a French Provençal, with bronzed local cusk or cod and a herbal, aromatic white wine broth with red onion, diced tomato, and shaved fennel to cover the ravioli. This recipe can be found on our Facebook or Instagram.
